PANCAKES!!!

I've always been a fan of pancakes. IHOP, Bisquick, Aunt Jemima... Loved them all! When I got into baking, pancakes was one of the things that I needed to learn. The box stuff has gotten so expensive, plus "things" in the ingredients that may or may not be bad for you... Who has time for all that? I don't. So, instead... I make them.
After a couple years of practice, here are some good tips that I use every time. 

  • Cooking heat. I have an electric stove, so I'm unsure of how flame will factor into this. But my knobs go to 8, then High. I start my pan on High and when it is heated, I drop the knob to 7. 

  •  Pan - I use the least scratched up,black-coated, non stick pan I own. 
  • I do NOT grease my pan. I have used Pam, Crisco, etc... I have never gotten the results I get now... using nothing!
  • If you notice your pancakes getting a little burnt, remove your pan from the heat for a few minutes, and then continue making more pancakes. 
Using those tips, I make the most delicious pancakes that my family (especially the kiddies) love!
Simple Pancakes (Makes 9 - 1/4 cup pancakes. Double or triple if necessary)
     Mix in Bowl:
          1 Cup Flour
          1 TBS  Sugar
          1 tsp Baking Powder
          1/2 tsp Baking Soda
          1/4 tsp Salt
     Mix Separate:
          1 Cup Milk
          1 Egg (when I had no eggs, I used 1 TBS of plain Yogurt and they were awesome)
          2 TBS Oil (I use Veg Oil)
Pour liquid ingredients into Flour bowl, mix until creamy.
My hubby LOVES his with chocolate chips. I add the chocolate chips to the batter on the pan in order to evenly distribute or else it just gets super messy.... lol.

I use a 1/2 cup measuring cup to pour my batter onto the pan. I only fill it up 1/2 way. They make the perfect size and thickness pancakes, in my opinion.

The heat... the bubbles... it all tells a story  - - Ha, no really it doesn't... but it does tell you when it's time to be flipped.


 This is has taken me many batches, in my lifetime, to get them the perfectly brown color. 


However, if your pancakes are turning out like this
Remove the pan from the heat for a few minutes. Let it cool down a little.


I slightly butter each pancake once it's removed from heat. I think that when the pancake absorbs that butter, it adds such a delicious flavor.

But the outcome (after I sift a little bit of powdered sugar, drizzle a little syrup)... DELICIOUS!
